The Astor tuna buzzonaglia from the Mediterranean represents the poorest part of the fish, the one that for centuries was used by the less wealthy, such as fishermen and workers, who could not afford the more valuable cuts such as ventresca, tarantello and tuna. This cut was obtained by digging between the bones of the fish with a spoon, extracting small parts of tuna, fundamental for the preparation of condiments such as tuna ragù or fish sausages, such as tuna salami (Ficazza), a highlight of the Trapani culinary tradition.
Today this part is a cut that is taking on an important value because its taste is very sweet and tasty and for many a discovery because it is ideal for seasoning first courses and salads.
